The flattened table beet (Beta vulgaris) is a flowering plant in the family Chenopodiaceae. The main product is the root, along with its leaves, typically consumed cooked. The round, flattened, and elongated varieties have a strong red color owing to two pigments: betacyanin and betaxanthin.
